Remixed Recipes: Jungle Bird

We’re back again for another edition of Remixed Recipes. This week’s drink is one those I feel does not get enough attention especially from that certain sect of modern barmen. Amaro’s and bitter liqueurs are all the rage these days for good reason. They can be quite refreshing and aromatic, if a bit of an acquired taste. I’m sure like me you’ve tried to share your adoration of Campari or Fernet with your friends or family only to be met with those distinct “Amaro” faces when they try it. If they could try it a few different ways they could get to really enjoy it, so how to make it palatable to beginners?

That’s where the Jungle Bird squawks in. This Tiki cocktail shows off the beautiful color of Campari along with dark rum and fresh island fruit. In some people’s mind perhaps a bit to much fruit. Yes I think thats what prevents a lot of bartenders for taking this tasty toucan seriously. The whopping half cup of pineapple juice. Perhaps they think, “Nothing else can come through!” “It will be too one note.”

They couldn’t be further from the truth. Now I’m no hater of the cans of Dole pineapple juice. I often use them especially in a pinch. But in cocktails like this that need so much of this delicious golden elixir it pays to juice one fresh. The flavor you get from fresh pineapple is mind blowing and lovely. It’s really not that hard. Cut off the rind and dice the flesh and core of the fruit. Blend well, and pass through a fine mesh. In the fridge it will keep about 4 or 5 days. But you’ll almost assuredly drink it before then.

So how do you make this beautiful birdie?

¾ oz Campari

½ oz Fresh Lime Juice

½ oz Sugar Syrup

4 oz Fresh Pineapple Juice

1 ½ oz Dark Jamaican Rum

Shake these ingredients together with ice and pour unstrained into a double old fashioned glass. Classically this was garnished with a cherry speared to a orange and lemon slice with a orchid. If you lack orchids a mint sprig looks nice to.
